Stepping up to a 1/2bbl brewery

Has anyone ever really scorched wort with an electric element? I’ve read of guys using these low density 5500w elements full tilt with no downsides.

The RIMS setup could be much less labor and cost, but then again I already own the 5500w elements so I might just soldier on.

Dumping mechanism for the mash tun?

The current plan is to use a shop vac to empty it into a trash bag and then deal with it as normal (which is usually dog biscuits or mulch). That’s why I chose the low rolling MLT trolley setup. Everything ideally is clean in place, no lifting pots around etc. The KET height for example puts the kettle rim at a height where I can reach the back/bottom of it standing flat on the ground.
