Newbie looking for recipe suggestions

Greetings all!
I have a supplier for what I call Heritage grains.(Strains that haven’t been grown in quantity for some years)
I currently can get Turkey Red wheat and I was wondering if someone can suggest a recipe that would utilize this. I have a few solo brews under my belt and I have a local ‘mentor’ to help with the hands on stuff. Im not dead set on a specific style or flavor profile, just looking for suggestions.

Several belgian styles (lambic, saison, wit) sometimes use raw wheat. Brasserie Blaugies makes a saison using raw spelt that is supposed to be very good. It’s a small brewery though, and the beers are hard to get.
