Cooler vs Mash tun

I do double batches now and I split my mashes into different pots with different percentages to make different recipes so the cooler is the only thing that I could use. This winter when I will probably do only single batches I will defiantly do BIAB. For single batch BIAB the one thing is how would you separate off some wort if you want to Carmelize some of it?
