Alpha and beta?

If I just use beta temps , do I have to follow it with an alpha temp?

No. I use the 142* then to mash out when brewing my Duvel clone…

No, not required. You might want to mash longer, maybe 90 minutes or more, since beta amylase works slower than alpha does. But there’s no need, and actually, alpha is pretty active at reduced temperatures anyway so you’ll have the benefit of both regardless.

If I can recall, Beta becomes denatured (dies) above 155… Isn’t that why the the 152 is like the sweet spot?
