I’m thinking of doing the John Q Adams extract kit next. After I add the yeast to the primary, can I store it in my garage to keep it cool? My basement probably sits around mid 60s to high 60s, so I want to store it in a cool place (from reading about the yeast they provide, it seems its best to keep the beer stored in a cooler place than normal). Can anything happen to the yeast if the garage is in the 40s at night and 50s during the day? Also, would I leave the secondary in the garage too, to ensure it stays cool. Thanks
That’s a lager so temps around 45-50 are great. However, a daily wide temperature variation is generally not a great thing for yeast. They like to have fairly stable conditions. So, I would recommend sitting the fermenter in a bucket of water, ie. search for ‘swamp cooler’. The thermal mass of the water bath will moderate the temperature swings.
