Not necessarily…If I bother to top up a secondary at all, I’ll very often just top up with finished beer that I have in keg at the time.

I noticed that too. Seemed odd, bur maybe they keg some too and it like what The Prof mentioned.

from the video, i would guess they topped off the secondary with water, to try to minimize head space. I’m also guessing they aren’t really concerned with abv, but i don’t know how much water they used to affect body
