Reading the thread title is kinda silly. At what temp should you boil? Why, boiling temp, of course! Reading your post, however, I think I see what you’re after:
Once your wort reaches a boil, you can dial back on the stove. You do not need a a violent, splashing boil. A gentle boil will be fine.
