Brewed the Saison de Noel 4 weeks ago and bottled today, I opted for the 3711 instead of the farmhouse. This stuff is a beast, 1.070 to 1.006. Did 10 gallons, mashed at 148 for about 80 minutes and pitched a healthy starter. I heard it could chomp through some wort, but didn’t expect this. Beer tastes great at bottling, can’t wait til it’s done, gonna bottle condition for 3-4 more weeks. :cheers:
