I’ve read on other discussions that Australian/New Zealand hops make for good Saisons. I’m interested in using Topaz hops, but the AA levels are very high – 16.5%. So, my plan is to use Topaz largely as late hop additions and/or to hop stand.
Any advice on getting good flavor and acceptable IBU level?
