Speckled Heifer Yeast Choice

I am looking to try my first partial mash brew and plan on using the Speckled Heifer partial mash kit. There are three choices for yeast. Does it matter which one I use or is there one that would provide a better beer? The three options are SafeAle US-05, Omega West Coast Ale, and Wyeast 1056 American Ale. Any help would be appreciated.

Also, Most 5 gal extract kits I’ve seen use 2.5 gal for the mash. Should I use a similar volume for this kit then top up to 5 gal in the fermentor?

I’d stick to dry yeast (05) for now… Get a better handle on your process… hitting targeted OG and volumes is a good place to start… Your kettle sounds like it’s a bit small… Time to dream of a bigger one… :beers: :mask:

New Glarus uses a Kolsch strain yeast like wy2566/wlp029.
