Single Mead....The Basis for Many Melomels?

If I am understanding correctly a Melomel is basically a fruit flavored mead, it is made by adding fruit flavoring to a basic mead after fermentaion. If this is correct than in theory I could make 5 gallons of a basic mead and from that make several variation of Melomel based on flavor and carbonated and still…is that correct?

There are lots of versions of melomels. They are typically made by adding fruit to your mead during primary or secondary fermentation. But, you can also add fruit juices or extracts just before bottling.
