Sierra Nevada Celebration Extract Clone

I brewed the extract version of SN Celebration using the hop schedule that denny posted. I can’t wait to try it.

I don’t have my brew day log in front of me but I seem to remember mashing at 153°. Going to bottle this weekend so we’ll see how it comes out.

I kegged the SN Celebration ale and got to try it today. I am very impressed with it, it tastes very close to the original. I am glad I used the hop schedule that I got from this forum, and will definately brew this again. Thanks to all that took the time to reply to my posts.

It might be helpful for you to know that they mash this at 157.5°F![/quote]

Seriously?

I know! Sounds crazy, huh? But that’s from one of the brewers.

It does. I’m scared to go over 155.

I went ahead and brewed this a couple months ago. It’s nice but came out a little off. First off, I only mashed @ 152. I don’t remember where I got that temp from but obviously I missed the post about mashing at 157. Could this lead to a really watery mouth feel? Also there is next to no head retention. The actual beer has a really intense head on it and I want to re-create that. Would the higher mash temp maybe correct that or should I go ahead and add some wheat to the grain bill?
