Settings for a temperature regulator

LOML has graciously allowed me to purchase a temperature regulator for our underutilized chest freezer. I will probably make an attempt at lagering soon, but first I have a couple of questions.

  1. Should I set the temperature to the same temp I want to beer to ferment at? Will the beer and the chest freezer stay in equilibrium?

  2. How many degrees of variance should I allow the regulator? Does the beer have enough thermal mass to make a 3 degree swing acceptable?

Yes. Then, take an ace bandage and wrap it around your fermentation vessel. Place the probe in the bandage. This will ensure that the temps remain consistent.

I would set it at 1* while very active fermentation is taking place and then move it to 3* after.
