I am looking to brew a beer for a special occasion that I would like to age in addition. Any recommendations? I know the standard stuff for aging such as barleywine, imperial stout, Strong Scotch Ale. I am looking to do something a little different.
You’ve covered most of the beers people like to cellar. So, how about a mead?
Not saying on not doing one of the above. Just looking for maybe a unique take on one of them.
My next big project is an attempt at an Eisbock. Probably do a bock or dopplebock with the second runnings depending on gravity I get.
If you want to go for something different that will age well, go for a sour beer. Or brew up one of the styles you mentioned, then move it to secondary with some Brett.
How about a bourbon barrel porter?
