I have 2- 6 gallon carboys can I put 3 gallons of wort in each. The directions calls for 6 gallon instead of what I am use to which is 5 gallon batch . Will there be any problems doing it this way. Then when finished can I put both in a bottling buck to bottle or do I need to get a 6 1/2 gallon carboy.
Others may have different advice, but I don’t see any problem with your plan.
Do I have to worry about to much head space
Before fermentation begins, O2 in the headspace will help the yeast reproduce. Once fermentation begins the head space will fill with CO2.
Is that good or bad
It’s good.
