I have a four month old Flanders Red and a few weeks ago I couldn’t resist so I opened it up and stole a small sample which was great, not very tart yet but that’s cool for now. Anyways, a little while later I glanced at it and it had some nasty bubbles and a nice looking thin, slimmy layer over the top. Pellicle achieved! I’m assuming it was because of opening it up to the air. Now a little while later the bubbles have died down, there is still a filmy layer on top but there is also some white stuff going on up top. Kind of powder sugary almost. Is this normal or do I have some mold going as well?
Note: The lighting in the pic I took was so poor I decided not to post it. I’ll wait a bit and snap another to put up for your viewing pleasure. I wish I had done it earlier with the big nasty looking bubbles.
