Been reading a artical on fb about overnight mash. So you safe time the next day on your brewing day. Sounds intresting. But what about the risk of infection during the night.
As long as you keep it around 150F, it should be fine to sit overnight. It’s when you get it in the 110-120F range that you can run into trouble.
Than i stick to my plan. Start mash four in the morning. Once wort collected. And boil going. Start next mash. So got 2 sessions done in one day
