Many questions about sweet mead

So I made my first sweet mead (NB Sweet Mead kit) and after 2 weeks of primary fermentation and no signs of activity in my air lock I racked it into secondary (3 gallons as a control and 4 gallons onto peaches). Anyone have tips on how long to leave the mead on peaches? I plan on making a still mead so would I be okay bottling in beer bottles with crown caps or should I do a champagne bottle? Also, what are your thoughts on acid blends? I’ve brewed multiple beers but mead is a whole new world to me!

Take a taste after two weeks, that will tell you if it’s time to get off the peaches.
Beer bottles are fine for still mead.
I’ve never used acid blend.
