12 lbs maris otter
1/2 lb of cars-pils
7 oz amarillo ( add all in at 10 min )
mash however you like…I say 60 minutes at 148-152
choose your yeast - I use allot of us-05
60-90 minute boil, you choose.
7oz of amarillo at 10 mins…??? :?:
I really can’t take credit for this recipe, but here is the explanation.
“Adding all the hops at the last 10 minutes of a 90 minute boil, may seem like a waste of hops. True 7 oz of Amarillo hops is escessive, yet what happens when you add that much aromatic hops all at the end? With the alpha being so high, you get the bitterness to balance the beer, and you also get all those flavor and aroma compounds that don’t boil off, leaving a amazing nose on this brew.”
I personally want to try it, but figured WTH…you are looking for something to try so I figured let you try it first
IPA’s and APA’s - lots of them. Try out a bunch of hoppy styles, or take a style that you like and could stand to be “hopped up”. I’ve got about 18 pounds of hops in my freezer, and I do 3-gallon AG batches like you. Here’s what I have done and have lined up:
“Düsseldorf IPA” - stickebier meets IPA using German hops
American Pale Lager - APA meets Helles Bock
“1.6” - a small, hoppy dubbel
Hoptoberfest - dry hopped Märzen
Rye IPA
Black IPA
100% Brett IPA
All of the hop varieties you have listed will work very well together, so mix and match at will. Simcoe/Amarillo/Citra is an all-time fave of mine, but I like it best with some Columbus in the mix as well.

I would literally punch my dog in the face to have that kind of hop stash!
I have heard the Falconers Flight make a great SMASH IPA. That would be the direction I take it.
Not to be the one upper, but I’m wondering what you would do for my current inventory:

Wow, impressive list! I’m down to about 18 pounds right now, but I need to thin it out a bit more (i.e., brew more beer) because the wife wants some freezer space back. I need to do another brew session or two of small single-hop APA’s to taste test some of the new varieties.
Not as impressive as yours, but here’s my current list:
Holy Crap you guys got some hops!! I thought i was in good shape…tell me more about this SMASH IPA???
Single Malt And Single Hop. It’s a good way to handle on malt and hop profiles.
Although, if you’re just testing out hops, then I don’t know if I’d recommend a SMaSH. Go with a simple grain bill you like, but don’t feel the need to stick to one grain - I find that to be a bit bland. 2-row/Munich/Victory is my fave, but 2-row + light or medium crystal works as well.
