Licorice Sweet Stout

The better half found a store dedicated to licorice in Cologne Germany while on a business trip. She brought me home a small bag of very nice licorice root to have some fun with. I am thinking about making a sweet stout and rely on the licorice to sweeten it instead of lactose. Here is my basic formula right now…

Malt:
8 lbs Maris Otter
1 lbs flaked barley
8oz blackprinz
6oz simpsons chocolate malt
6 oz coffee malt
8 oz English dark crystal

30 IBUs of a clean bittering hop… still playing with this one…

Wyeast 1099

1 oz licorice root for 20 minutes

Thoughts?

Licorice root is very sweet contains Glycyrrhizin which is 50 times sweeter than sugar. I use 1/2 oz and 2 oz lactose in a sweet stout that i make every saint patticks day. My half Irish half German family love it
