Kegging procedures

The instruction sheet that comes with the kits I buy always include fermentation instructions for priming sugar and filling bottles. I use a corney keg. When the instructions start their “sanitize siphoning and bottling equipment” paragraph, what would be the instructions for kegging?

Not sure if i’m understanding your question completely. When I’m ready to keg my beer I always make sure to properly clean / sanitize my keg prior to filling. I use PBW for a cleaner and StarSan for a sanitizer. Just make sure your siphon is clean and sanitized then siphon your beer into the keg. As far as carbonation is concerned I use a #5lb Co2 tank for force carbonation.

Just filling the keg? Clean and sanitize your keg and all your siphoning/transferring equipment. Siphon beer into keg. Close keg and pressurize with CO2. Be sure to purge the oxygen from the headspace. I set the pressure to like 5 PSI or so and burp it a bunch of times by pulling the pressure release valve. The CO2 pushes the oxygen out and leaves your headspace filled with CO2. Then, you can google “keg force carbonation” for some hints and tips on how to carb your beer a little faster. The best method to me is the “set it and forget it” method. Set it to your serving pressure and leave it alone for a couple of weeks for the carbonation to set in.

Now if you’re not pressurizing with a CO2 tank, you can still use priming sugar in the keg. Use the proper amount of sugar for your desired carbonation level and follow the same instructions (heating water, mixing sugar, boiling, then cooling) and put it in your keg. Then siphon your beer into the keg. It should get a good mix going, but you can take a long sanitized spoon to gently swirl it. Close the keg and let it sit at room temp or a little warmer for 2-3 weeks.
