Fruit Beer Question (Apples)

I’m looking to do an Apple Ale vs. a cider and I’m wondering what the best stage would be to introduce the apples? I see a couple apple ale extract kits but I’d like to use fresh pressed juice or the fruit itself.

I would think a secondary on top of chopped up apple would be best. Amounts and times I got nothing, but for flavor, I think this is the stage in the game where you would get it.
