Freeze Drying 2-Row?

Is it possible or would it even work to Freeze Dry germinated 2-row? My father soaked a few pounds of 2-row in water and then let it germinate until the acrospire and sprout was about 75% length. Instead of roasting it he is going to freeze dry it in the garage. I understand that roasting helps with melanoidin formation (Maillard Reaction). The concern that I have is that it will still taste “green”, like a raw peanut. A friend i spoke to brought up the fact that when it slowly freezes (in a cold garage) that the ice crystals will rupture cell walls. Will it be mush? Has anyone read anything about freeze drying or has anyone done it successfully? How did the flavor turn out. Any help would be greatly appreciated.
