So, as a very articulate and pretty well-read man of modern times, I feel I must make a confession.

For my first year of brewing I used a lot of Sah-FAH-lé yeast.

I figured it must be from France.

You were half right, it is French. Safale is a brand made by Fermentis which is owned by Lesaffre, a French yeast company.

Shouldn’t anything brewed with that yeast in the U.S. be called ‘freedom beer’? :lol:
