Hi all, I’m looking to brew an NEIPA that needs to ferment on the warmer side. I’d like to keep the fermenter around 80 degrees, but I normally store it in my basement that is around 65-70 degrees. I’m thinking about getting a heat wrap and sensor for my Carboy, but what is the best place to put the sensor probe? Do I just set it on the ground next to the Carboy? Ideally I would put it in the wort itself, but I can’t find a lid for my NB plastic Carboy that has a hole for a probe.
As @brew_cat said, tape it to the side and insulate it WELL. While in the middle would be best it can be difficult to find a product that will allow you to do so with a bucket. On the side will be close enough. Not sure what yeast you’re using but 80° is pretty warm unless you’re using Kviek. Fermentation is exothermic So your 70° basement will place actual fermentation temps around 75°, if not higher.
what I did this last time was slide a spring loaded bottling wand through a stopper and put it in the fermenter as a thermal well and drop the probe into it in the wort
