Has anyone fermented pure cane syrup? What kind of beverage is possible? Not talking about distilling. Here in North Florida this is cane juice cook down season.
Mix with water to get a starting gravity of 1.050 area, ferment, clean it up and bottle/keg to get it carbonated. Add some flavor and report back.

This would be an unflavored seltzer style product. As @sneezles61 said, keg it with flavoring.

If you don’t mind seltzers or know someone who does, it’s totally worth the effort. Add some yeast nutrient and a neutral yeast. Cold crash. Add some flavoring at kegging. Super easy.
