I just recently purchased one of the 20 min boil kit recipe and the 3 month Oktoberfest recipe.
I just passed the ‘beyond brewing day’ on the 20min kit, syphoned it to the 2nd fermenter and was left with the sludge in the primary fermenter.
So…Can I make the wort for the Oktoberfest and just add it to the leftover sludge in the primary fermenter?
First, what kind of yeast did you use for the first 20 minute kit? If it was an ale yeast you’ll be making a Mocktoberfest, which is fine! Do you use any method for temp control? Depending on the yeast, you could ferment a little cooler to limit esters.
So, can you transfer your wort to the yeast in the fermenter? You sure can! And, it will take off fast. Now, it’s likely an over pitch, assuming both were 5gal kits. But, in my experience it’s difficult to get poor results and/or off flavors from over pitching. If you’re truly worried you could discard about half of your yeast cake before transferring.
