Yes you can, divide the weight of the grains by 5…
same with the yeast, and the hops… That piece gets a bit trickier…

One thing you may want to consider is getting smaller, 2gal fermenters. Due to the size of a bigger bucket/carboy a gallon will be spread out so much that you won’t be able to bottle much.
Yes i have a small bucket i got from HD that I’ll make a small 1 gallon batch in but transfer to a 1 gallon wine jug after a week
