BRY-97 West Coast Beer Yest

Used this yeast for the first time. The fermentation was fast and vigorous, but the result, not what I expected. I expected a “clean” yeast. Similar to US-05, Cal Ale, or 1072. BRY-97 seemed to be estery to me. Anyone else have this experience. FYI - I fermented US-05 in other beers in the same room that came out as expected so I don’t think ferm temp had anything to do with it. Ambient was about 67*.

Hmmm, if your ambient was 67°I’m betting your fermentation temp was well up in the low 70’s, which would account for the esters. BRY-97 is said to be mildly estery in the Danstar literature anyway, high temps would probably produce even more esters. IMO that yeast should probably be pitched around 62°or so and held around 65°or so, max.
