I don’t really have a practical way to lager this at cold temps. I did actually consider using our main refrigerator for the 5 gallon bucket, but choose to stay married instead of make the lager.
If I buy a different non lager yeast, can I still make a good beer with this kit? If so, which yeast?
You might give the Wyeast 1056 a try. It’s a clean fermenting yeast in my experience, and I’m betting you might be pretty happy with the results. Another one you might try is the 2112 California Lager yeast. It’s supposed to retain lager characteristics up to around 65 degrees or so. I tried it once with a Boston Lager style beer, and it was ok. Not great, but not bad at all.
