Size: 5.5 gal @ 68 °F
Efficiency: 75.0%
Attenuation: 82.0%
Calories: 237.25 kcal per 12.0 fl oz

Original Gravity: 1.064 (1.060 - 1.080)
Terminal Gravity: 1.011 (1.008 - 1.016)
Color: 11.47 (6.0 - 19.0)
Alcohol: 6.45% (6.0% - 8.5%)
Bitterness: 22.9 (18.0 - 28.0)

Ingredients:
1 ea Campden tablet
6 lb (46.1%) Belgian Pils - added during mash
1.75 lb (13.4%) Munich Malt - added during mash
4.2 lb (32.3%) White Wheat Malt - added during mash
1 oz (0.5%) Kiln Black Malt - added during mash
12 g (27.3%) Magnum (14.5%) - added during boil, boiled 60 m
12 g (27.3%) Saaz (5.0%) - added during boil, boiled 20 m
20 g (45.5%) Saaz (5.0%) - added during boil, boiled 1 m
1 lb (7.7%) Meadowfoam Honey - added to fermenter

1.0 ea Wyeast French Saison 3711 (with 1L starter)

I like the look of it. I love the French Saison yeast too.

I know, I’ve heard awesome things about it. Great attenuation, and great saisony flavors. Will post tasting notes in a month or so!

Where do you get your meadowfoam honey?

I get mine @ a LHBS that carries it, but I feel like you can find it inexpensively on google.

re-reading “Farmhouse Ales”, this is probably more of a spring saison. I probably should have used a lager yeast, or certainly a cleaner ale yeast for a proper BDM. Just dropped it in the lager tank though, pretty tasty to date. Needs to age/cold condition a bit.

I agree, it is great stuff. I keep looking around, but have yet to find a better price than at a local farmer’s market, 3 lbs. for $15 the last couple of years; don’t know if it will be higher this year.
The meadowfoam only grows in the Willamette Valley in Oregon.

$5 a pound for organic unpasteurized slow food honey seems mighty fine to me!
