American wit

Ok so I brewed my summer ale this month and the only yeast I had available was cellar Science Hazy. I figured what the heck it’s a wheat beer so haze is no problem. A bit of Tet at 60 the lemon at flameout and mandarin peels in the WP. Damn if this doesn’t taste lit a Witbier. Wierd right? Not allagash wit but in that area

I make my wit using a Chico strain. I feel the neutral character allows the coriander pop and provide that citrus, that I prefer.
It doesn’t surprise me that a hazy yeast would do something similar. Hazy yeast are usually known for their biotransformation and with the little amounts of hops is going to be negligible. Couple that with a healthy dose of lemon and mandarin peel and you’ll get something very similar to a Wit.

I just kegged a Norwegian witbier – standard grist + coriander but I used Voss yeast. Turned out pretty dang good.

Still enjoying it a couple months later. Still hazy and the coriander is popping even more now, which I think is lovely actually.

It’s the coriander that makes this beer. The ‘citrus’ comes from that though most think it’s the orange peel.

You’re exactly right. I don’t even use any citrus peel at all. Tastes like witbier to me, just the coriander.
