I know see you have Bicarbonate (alkaline) in your water mix… Can you tell a difference adjusting for (or lack) of it? Perhaps you were already building up from RO water to begin with…
Thank you for posting this informative bit… It seems since the craft explosion really took off, with the big, malty, higher alcohol, the styles are getting tamed down… Have you an idea as to why?

Yes I was building from RO. I would imagine that the reduction of og and this abv might be too speak to a larger drinking audience

My neighbor who owns a distillery actually distills IPAs that are past their peak into booze. He has a deal with many of the local breweries. I’m waiting to try one since he began with all the pandemic beer that was going to waste… it needs time to age.

I think when I was in Brooklyn I visited a brewery with an attatched distillery. the name eludes me
