I am thinking about doing the Innkeepers all grain recipe from 2017. Not sure part of the recipe.
Malt:
6 lbs British Goldgen Promise
.25 Engl. Extra Dark Crys alt
Boil Additions:
1 lb of Corn Sugar
hops (not the issue)
The question I have, is why am I adding the corn Sugar in the boil? Why not , or could I use a DME?
Seems it’s a small grain bill, so adding sugar will raise the ABV. It’ll also dry it out.
I believe the corn sugar won’t bring as much flavor as DME… You may need more DME to equal the “points per pound” that corn sugar has…

Thank you. Now I am looking at other grains that will go with it. Being this is a Scottish ale, looking at other Scottish grains.
Up to you but using grains or DME to increase the ABV will change this beer drastically as it will increase the body. This beer is meant to finish drier with lower alcohol. It’s a clone of Timothy Taylor Landlord

When plain sugar ferments, there aren’t any flavors.

It’s 100% fermentable, leaving no dextrins. Sugars provided by grains or DME/LME aren’t and provide those dextrins, especially darker grains or DME/LME. I’m not saying you can’t tailor it to your liking or what you want to do, just suggesting that it will alter it significantly.
