Hi , this year I planted two pairs of elderberry. I harvested the flowers and made a vodka/everclear extract from the flowers. After seeping 4 months the extract has a nice amber color and strong floral notes. So far I have only added a little citric acid to it.I have a gallon of pinot grigio wine I have made and a traditional mead that is nearly finished. My wife and I enjoy St Germain and its floral/ citrous flavor. I was thinking of adding the extract to a wine and add citric acid to taste.
