I am currently brewing 5 gallon caribou slobber using the Danstar yeast. The stated ranges in between 64 and 70 degrees. I have been able to keep it right around 64 using a swamp cooler and swapping out an ice pack. Is it better to stay on the low side or try to keep it in the middle? Thanks.
Justin.

Your good . Keep it there for a couple days the you can stop adding the ice and let it ride.

Didn’t have to add the ice til this am when the activation started. I keep it in a coat closet (wife isn’t too happy about it, haha) which is center of the house and at 70 degrees. Once active fermentation ends, is there a range I should keep it in or while in secondary? Thanks!
Once the krauusin falls, you can start to relax about the temperature.

If you do secondary, cooler will help to clear it of sediment a bit quicker. Sneezles61
