My dad and I were supposed to bottle tomorrow but because of his schedule and mine, we aren't able to bottle until next Friday. We brewed a 5 gallon extract bourbon barrel porter kit from NB. Tomorrow would be 3 weeks from addition of the bourbon and oak chips. By the time we bottle, it will be 4 weeks. Instructions say 1-2 weeks after that addition. Are we going to run into any problem or off flavors by letting it sit longer? Thanks!
