I would use half of it for bottling, then do a two-step starter with the other half and make beer with it. Be sure to stir the bottling bucket every now and then to keep the yeast in suspension.
I have a glass carboy…im gonna just put some sanitized foil over the top and remove the airlock. Sound good???

I stand corrected. racked a oktoberfest to secondary, and put in my kegerator to lager. It did not suck the starsan out.

Not in my experience. Still sucks almost all of the starsan into the carboy.
My M.O. is 2 weeks from kettle to keg, then another week to carbonate; for most ales. Two weeks on the yeast cake is plenty of time. But 3 or 4 doesn’t hurt either, just depends on how patient you are.
Of course you have to make sure the gravity is down to terminal gravity.
