And Columbus is hard to beat for that biting bitterness that lingers and lingers.

I bitter almost exclusively with Chinook or Columbus, but that’s just my taste. Interesting to see that gypsum hasn’t been mentioned here yet. I always add gypsum to my hoppy ales, even all-extract brews. I’ve noticed a big difference since I’ve started adding gypsum to bring out the bite in my hoppy Pale Ales.
