Yeast for cider

What type of yeast would likely yield cider that tastes more sweet?

How then could you achieve a higher ABV with a sweeter taste?

I have toyed with the idea of a cider with WLP099 but don’t yet have the experience or knowledge of the chemistry at hand… and am not a big fan of dry cider.

Look up the term “ice cider”. Or “eis” anything. You can partially freeze any fermented beverage, then remove the concentrated liquid from the frozen ice crystals to get far higher alcohol, while still preserving residual sweetness.
