I am brewing today, and plan on using 1028. I popped the nutrient pack this morning around 6am, thinking that by this afternoon I’d be ready to pitch. I’ve given it a few shakes from time to time, but I have not observed much swelling at all. I just purchased it about 2-3 weeks ago, and the date on it is some time in June of 2015. Do I need to be worried?
I would take this yeast back for a refund. Being well over a year old it is most likely dead. Sorry for the bad news.
Edit: CALL ME FUTURE PERSON. MY MIND IS A YEAR AHEAD. IT IS NOT 2016, BUT 2015. (How many checks have I written with the wrong year??)
Allow at least 24 hours per week after manufacture for the pack to swell. Actually, it’s not necessary for the pack to swell before pitching. And if the OG of your beer is over 1.040, I REALLY recommend you make a starter.
Um, June 2015 was 2 months ago.
This is a yeast that I bought to make a REALLY big beer with in a few weeks, but decided to make a smaller beer (at most…the OG will be 1.048) instead of buying more than one pack and/or making starters to grow more for the beer to come.
I will be really ticked if this doesn’t ferment!!

Sounds like a plan…you’ll be fine.
