+1. Definitely enough yeast for a 2.5 gallon beer! I would even pitch a ‘new’ smack pack of yeast (without a starter) into 5 gallons of a 1.046 wort without hesitation. As long as the yeast was relatively new… 1-4 weeks old. Old than that and I’d make a small starter.
It’s not new, or even close. Production date on the packs is February 12th, and I am not even planning on brewing with them until late June. I will probably just go to the brew store that’s about an hour away and pick up two new packs.
