Im curious about trying this yeast. I want to ferment at the cool end 55-60. According to wyeasts description it will work that cool. Has anyone used it that cool? If so how were the results? Also, after I brew a few american hefeweizens and reizens I thought I would try a hazy wheat ipa. Will this strain emphasize hops and dry up enough for ipw?
I’ve used it a few times in a American-style honey wheat beer. The OG has been around 1.050 and it usually attenuates down to about 1.010… It starts out a little cloudy, but usually drops pretty clear after a few weeks or so in the keg. I find it a great summer beer, personally.
