I was on the duvel website and they say they primary for 2-7 days…then lager below freezing temps “to continue to ferment gently”…wouldn’t Wy1388 crash at then temp and stop fermenting?
What is this a dumb question?
I would not drop the temp until the gravity has come very close to what I expect the terminal gravity to be. 5-7 days.
After that, it’s just lagering/cold storage.

Yeah i let my primary go 21 days @ 68-70*F before i started the lagering…I was just suprised that moortgat uses such a short primary fermentation and lagers after only 1 week…then again they have a super high tech brewery and need a fast turnaround
