OK Im doing a 2.5 AG batch of leftovers…I plugged it into brewmaster and it looks like it will be along the lines of a porter. What im looking 4 is if these grains/hops mesh well together??
3.2lbs maris otter
1.5lbs pilsner
1lb pale liquid extract
5oz white wheat
4oz caravienne
4oz rye
8oz choc malt
1/2 oz pearle 60min
1/2 cascade 10 min
1/2 glacier 0 mins
If you’re cleaning house just go ahead and clean house. The only thing that stands really stands out to me is the cascade. I’d save those and just toss them into the end of the boil for you next pale ale or IPA and maybe move glacier to 10 minutes.
Seems like it will be ok and interesting…though for my personal taste, it’s a little heavy on the chocolate malt (but that’s just me…go for it and make adjustments next time around if necessary).
And there’s no reason not to keep the Cascades.
As far as ‘traditional’, that’s the last thing to be concerned about anyway…it’s unimportant and irrelevant, actually. The style rules only matter if your chasing a competition ribbon. Outside of that, just follow your bliss.
Make beer that you like, and traditional ‘styles’ be damned, especially for a cupboard cleaner recipe (some of those have turned out to be favorites!)
I don’t think it will suck. I’d probably cut back on the chocolate, maybe try 4 oz. I don’t know offhand what the AA% of Perle runs, but 1/2 oz. of long boil hops might not be very noticeable - you might want to up that if you like a bitter finish. I agree that the Cascade is fine, as long as you like that roasty malt/citrusy hop combo.
As far as it not being to any particular style, I wouldn’t sweat it. I think people worry too much about that. For me, styles are a reference point, a way to easily categorize and describe beers, but ultimately I brew what I think will taste good and don’t worry about style. What style is a beer with 11 lbs MO, a lb of Amber malt and a bunch of Apollo and Glacier hops? D**n tasty style, as I recently found out, but you won’t find it in a BJCP book.
