Which yeast to use

I am going to be cheating on NB and brewing the hop head double IPA from Midwest ( no offence NP, still love you best but sometimes you have to switch hands for some strange). Anyway they recommend wyeast 1056 or white labs cal ale 001. I have only used wyeast before and was wondering if anyone has an opinion on which to use and why. I will be doing a starter.

I’d use US-05 and then you won’t need to make a starter.

Are there enough healthy cells for a good fermentation on a high gravity beer with dry yeast, and do I need to rehydrate it? Thanks.

Yes. I use one packet per 5 gallons up to OG 1.08. No need to rehydrate.
