I have been fermenting in a freezer with a temp controller for a while now. I keep the freezer at around 63 degrees F. Should I be sanitizing the temp probe and putting it into my wort instead to keep the wort in the proper temp range?
It’s best to control the temp of the beer rather than freezer. If you have the freezer set to 63° and are monitoring that the beer has to rise to a temp and give off enough heat to raise the temp of the freezer. Good news is that you can simply place the probe on the side of the fermenter and INSULATE it with styrofoam (I attached it by wrapping an ace bandage around the fermenter) and keep a consistent desired temp.

I’m even simpler…I use an old sponge over the probe on the side of a bucket. Duct tape over the sponge.
