When to bottle

Caribou slobber has been fermenting for four weeks and airlock still bubbles every 12 seconds should I bottle or wait?

4 weeks is long enough that it should be done - unless there is some infection or you pitched yeast that was in poor health. It is most likely that you are just seeing dissolved CO2 coming out of solution.

But you should NEVER bottle until you are sure it is done. Take a gravity reading, then wait a couple days and take another one. If they match, the fermentation is done and you can safely bottle.

I see that sometimes also. What I do is after 3 weeks open the fermenter and take a first sample. That let’s the pressure off. Then when you put the cover back on you probably won’t see any more activity. Unless of course you get a high reading, then let it go a little longer.
