I have a 5 gallon batch of cider fermented with a gallon bag worth of merlot grapes and Lalvin RC212 yeast sitting in a secondary. The batch was started at the beginning of November. I have nt done a cider like this. How long should I let it sit before bottling?
Beginning of November means almost 3 months worth with at least one racking, so I would say if it tastes good go ahead and proceed to bottling or kegging. If you have the patience to wait it out, my opinion based on my experience with cider is that it will mellow and improve with another couple of months.

I understand the final gravities are somewhere between .995 and 1.000.
