What's your favorite yeast for a RIS?

I used 007 on an IIPA this year, and it worked as you described it. Very fast fermenter, dropped clean, and did a great job of chewing through the fermentables while still leaving some character behind.

I’m no expert on big beers, but 007 certainly did the trick for me.

LOL, as good as the beer was I’m not asking too many questions. I’d sacrifice a goat if he told me that was part of what he did! :mrgreen:

I have had great luck with US-05. It’s such a trusty yeast.
